Recipe

Ingredients

  • 9 oz. unsweetened chocolate, chopped
  • 15 T unsalted butter
  • 4.5 C semisweet chocolate chips
  • 1 1/3 C flour
  • 1/4 C + 1 1/2 t unsweetened cocoa powder
  • 1/4 C + 1/4 t baking powder
  • 1/2 T salt
  • 2 1/4 white sugar
  • 7 eggs
  • splash of vanilla
  • powdered sugar to decorate

Instructions

  • Melt unsweetened chocolate, butter, and 2 1/4 c chocolate chips in a saucepan over low heat, stirring occasionally. Let cool.
  • Stir together flour, cocoa, baking powder, and salt.
  • Beat together sugar, eggs, and vanilla with an electric mixer until pale and frothy, about 2 minutes.
  • Mix in melted chocolate mixture and then floour mixture at low speed until combined well.
  • Stir in remaining chocolate chips.
  • Chill, covered, until firm, about 2 hours or more.
  • Preheat oven to 375 degrees.
  • Scoop balls with a scooper and arrange a couple inches apart on ungreased cookie sheets (lined with parchment paper).
  • Dip in powdered sugar and put powdered sugar side up on cookie sheet.
  • Bake in middle of oven until puffed and set, about 9-11 minutes. (cookies will be soft in the center).
  • Let cool a couple minutes on cookie sheet
  • Transfer to racks to cool completely.


This is another family recipe. These cookies may take a little bit of work but it is soooo worth it. There is the perfect amount of sweet without going overboard and trust me when I say these cookies are paradise.
